How to prepare Masala:
1. First we will take the chicken and wash it well. After washing it, we have to fry it, for this we will take a pan and put mustard oil in it (you can take as much oil as you like, just half the chicken), you can take any oil you want but mustard oil It tastes very good and will leave this oil to heat up.
2. While the oil is heating, we will prepare the chicken for frying. For this, take the washed chicken and add one tablespoon of salt and two teaspoons of turmeric and mix it well in the chicken.
3. The oil that we have put in the pan is now hot, so now we will put the chicken pieces one by one and fry it well. We do not have to fry the chicken too much, it is just a little avoidance. If you postpone the chicken for too long, it will become hard and bitter. While doing this, we have to beat all the chicken. If you do not want to fry the chicken, then you can also skip this process, it will not affect whom.
4. Now we have to prepare the masala for chicken . For this, we will take the same cauldron in which we fried the chicken, after frying the chicken, we will prepare the spices of the chicken in the same oil.
5. When the smoke starts coming out of the oil of the pan, it means that the oil has heated up, now add whole cumin seeds and when it becomes black then add a chopped onion and 2 - 3 bay leaves.
6. When the onion turns golden brown then we will add garlic, ginger and onion paste and add the spices we prepared earlier. When the masala fry a little, then add salt and garam masala as per taste.
7. Now roast all these spices till it leaves its oil. Now the spices have left their oil, now we will put the fried chicken in it and fry it for just 5-6 minute. After 5 minutes, just add 250 ml of water and cook it till it comes to a boil.
8. After the chicken comes to a boil, it will be cooked for a while and then turn off the gas.
